Experience at rotation:  I think I had perfect timing when starting my rotation at FUSD because it was during audit season.  During my rotation I was able to play a critical role in prepping sites for an upcoming audit.  I was also able to see the large scale that FUSD operates on and the crucial role that the RD plays in managing staff, creating menus to meet USDA guidelines, and creating specialty menus for students who have a wide spectrum of food allergies. 

How experience helped achieve career goals:  My experience at this rotation helped me gain leadership skills and it also introduced me to a whole other side of school food-service that I was unfamiliar with. This rotation was very busy, but I enjoyed the variety of situations I was exposed to and gained many valuable experiences that will help me if school food-service is in my future. 

Assignment title:  Develop one new recipe to meet USDA school food guidelines and include a nutrient analysis. 

Assignment description:  FUSD was in need of a new cold bean salad to fulfill the mandated 1/2 cup of beans per week requirement, so I developed a pinto bean salad recipe that met USDA guidelines.  I also input the recipe into NutriKids to get the nutrient analysis.
