Experience at rotation: During my rotation at the Fresno EOC kitchen I was able to learn a lot about the different programs that the EOC kitchen provides food for. One of the programs that I learned the most about was the Summer Food Service Program in which the Central Valley has one of the largest enrollments in. The program has expanded to now provide food for over 50 different sites throughout the Central Valley. Along with this, the kitchen also makes and delivers food for several other programs along with its private catering events.
How experience helped achieve career goals: During this rotation I was able to learn about and experience the steps and progression of a food service audit. I was able to help my preceptor prepare for the audit and was also able to help during the audit. This experience will help me in the future if I am the RD responsible for an audit.
